BBQ Chicken Sandwich
These bbq chicken sandwiches are my take on an American classic. Juicy shredded chicken thighs, bbq sauce and a simple delicious coleslaw. I’ll also show you how to elevate that regular store bought bbq sauce into something amazing.
Servings: 4 sandwiches
Ingredients
- 4 brioche buns toasted
BBQ Chicken
- 3-4 lbs chicken thighs or breast
- 3 garlic cloves smashed
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp chili powder
- 1 tsp oregano dried
- 1/2 tsp pepper
- Water
BBQ Sauce
- 2 cups plain bbq sauce
- 1/2 cup Italian dressing
- 1/4 cup apple juice
Coleslaw
- 16 oz coleslaw mix
- 1/2 small red onion thinly sliced
- 1 cup mayonnaise
- 2 tbsp cilantro chopped
- 2 tbsp vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp celery seed
Instructions
BBQ Sauce
- Add ingredients listed for BBQ sauce into a pot over medium heat. Whisk and allow to come to a boil. Cook for 2-3 minutes. Once the sauce has thickened, removed from heat and set aside.
Coleslaw
- Add all ingredients listed for coleslaw. Mix thoroughly until everything is well combined and set aside.
BBQ Chicken
- In a bowl add all ingredients for BBQ and mix until all the chicken is well coated.
- Place the marinated chicken into a pot over medium high heat. Add enough water to cover.
- Once to a boil, cover and alllow to cook for 20-25 minutes or until the chicken is thoroughly cooked.
- Once cooked remove the chicken from the pot and shred into bite sized pieces.
- Add some of the BBQ sauce and stir until thoroughly mixed together.
- Assemble the sandwiches by toasting the brioche buns and placing down some of the shredded bbq chicken.
- Feel free to add more bbq sauce if you’d like.
- Follow that with a good amount of coleslaw.
- Then the top bun.
- Enjoy!
