A crispy version of the classic baked potato! All your favorite toppings on a bed of the crispiest potatoes ever with a home made garlic herb sauce!

Ingredients
- 4-5 potatoes peeled and cut into 1 inch pieces
- 5 strips bacon cut into pieces
- 1 tbsp parsley chopped, fresh if possible
- 1/2 tbsp chives chopped
- salt
- oil for frying
- parmesan cheese optional but high recommended
Garlic Herb Sauce
- 1/2 cup sour cream
- 1/2 cup mayo
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp parsley
- 1 tsp garlic grated
- 1/2 tsp pepper
- 1/2 tsp salt
- 1 tbsp water
Instructions
Garlic Herb Sauce
- Add all ingredients for the garlic herb sauce in a medium sized bowl and mix thoroughly. Once combined set aside.
- Peel and cut 4-5 medium to large potatoes into 1 inch pieces.
- Once peeled and cut add to a pot of salted water and boil until fork tender.
- While the potatoes are boiling, cut 5 strips of bacon into pieces and cook until golden and crispy.
- When potatoes are fork tender, transfers to a baking sheet and place into the fridge until completely cooled.
- Once cooled, fry at 375F until golden brown and crispy.
- Transfer golden brown potatoes to a bowl. Salt and toss the potatoes immediately out of the oil.
- Transfer to a plate and top with parmesan cheese, cooked bacon, parsley, chives and the garlic herb sauce.
