In a pan over medium high heat at in ground beef and season with salt and pepper.
Cook meat until it browns breaking into pieces.
Once browned add in 1 tbsp green onion and 1/4 tsp red pepper flakes.
Continue to cook until beef is crispy. Once crispy set aside.
In a serving bowl add in soy sauce, oyster sauce, sugar, peanut butter, crispy chili oil, sesame oil, garlic, parsley and green onion.
Mix until thoroughly combined and set aside.
Cook udon noodles according to packaging.
Once cooked add the sauce and top with crispy beef, green onion, parsley and sesame seeds.
Toss the noodles and sauce together until well coated and serve immediately.
