Cook birria according to packaging. I’m using the beef birria from Trader Joe’s.
Once cooked removed meat from sauce, shred and set aside.
Wrap 6 corn tortillas in a dampened paper towel and microwave for 10-15 seconds. This will help make them pliable to avoid breaking when rolling them up.
Lay down one corn tortilla and top with a slice of mozzarella cheese.
Then add a few tablespoons of the shredded birria meat.
Roll the corn tortilla while making sure to tightly tuck the ingredients inside.
Add some oil to a frying pan over medium heat.
Once the oil is hot add the taquitos seam side down.
By doing so this will seal them so you won’t need to use a toothpick or wrap to keep them together.
Cook on all sides until golden brown and crispy. This should take 3-4 minutes.
Remember we just want to crisp the outside, melt the cheese and warm the birria meat.
Once golden and crispy, place on a wire rack to cool off some.
Plate and top with crema, diced onion, diced tomato and cilantro.
Serve with a side of consomé (the sauce it cooked in) and enjoy!
